I'm hoping to film some of the less lethal stuff in the next week, however don't expect it up for another month. As for holsters, it depends on your team's function. If they are in plain clothes, I think any level retention is good, even a kydex holster. However, if you have to carry a visible firearm, I'd do level 2 at a minimum.
